Sunday, the morning after I returned home from my Honeymoon/Vacation, I went to the store and purchased all my basics for getting back on my weight loss diet…cuz I gained a few pounds on my trips;-)
The Grilled Shrimp Recipe is pretty easy and starts with thawing some frozen raw shrimp. The shrimp I chose were deveined but still had the shells on them. Some say this imparts greater flavor, but they just looked good.
FYI, the shrimp were from Smart & Final produced by Great American Seafood: White Shrimp 13/15.
First step was to thaw. Simply put them in a large bowl or pot and cover with cold tap water, adding a bunch more water every few minutes. This technique is best for thawing things out fast. Just be sure to use COLD water…you can actually just leave it running on low if you want.
Drain the shrimp in a strainer, lightly pat dry with a paper towel, and return to the dry bowl.
I did use the whole package because I was cooking for Denise and me (I eat a lot;-).
Season liberally with:
- Kosher or Grey Salt
- Granulated Garlic
- Red Pepper Flakes
- Fresh Cracked Pepper
- Dried Basil
- 2 Tbsp EVOO
- 3 TBSP Balsamic Vinegar
Let stand in marinade while grill is heating, then grill for about 4 minutes per side over medium-high heat.
In a clean bowl add:
- 3 Cloves Fresh Minced Garlic
- 1 tsp Kosher or Grey Salt
- Juice of 1 Fresh Lemon
- 1 TBSP EVOO
- 1/2 TBSP Red Pepper Flakes
Remove grilled shrimp from the grill and toss lightly in the bowl with the seasonings. Let rest for 3-5 minutes, tossing occasionally.
We actually just ate them as is, but they are great with salad, veggies, or whatever you want! Denise likes them with pasta, but that doesn’t fit in with my Boot Camp Weight Loss Program…so I just ate them!
