As we near the end of summer, we actually find ourselves at a great time of the year…Tomato Season! These things are great and are a low calorie, low calorie fruit. Enjoy the hell out of them in your diet, while you can.
This time of year everyone has a ton of tomatoes, and they can’t give them away. So if you don’t have your own garden, GO Get some! Next year plant your own;-)
What can you do with tomatoes??? Well that is the subject of this post;-) How about a great salsa or Pico De Guillo? Grab a few recipes online and make your own up tonight. Simply put, all you need is fresh tomatoes, fresh peppers (any kind other than bell), garlic, salt, onion, and cilantro. Then you can add anything you want to make the flavors change…such as: BBQ the tomatoes and peppers, or add things like lime, vinegar, smoke, other fruit (you can even substitute other fruit for the tomatoes), coriander, or whatever you want!
Best of all, the batch will last in the refrigerator for a while, so you don’t have to use it all at once. It actually gets better the next day.
So how can we make a nice (and simple) dinner with this stuff? How about this:
BBQ a nice, seasoned, chicken breast (I like it with the bones and skin ON during cooking) and chop it up.
Roast a couple (or a few) small red potatoes and chop them up.
Plate them up and dump a bunch of the salsa over the top and add a couple spoons of non-fat sour cream to the top.
Serve it with a small piece of fresh fruit…like a chunk of fresh pineapple!
Now that was easy! Not a ton of carbs or fat, and no tortillas…so you did a much better job with the potato. There are many other options like serving with fish, pork tenderloin, or even lean cuts of beef…Just NO chips unless it is your OFF DAY;-)
