Hi Brett, thank you for sharing this list with the world
My favorite is the Zucchini I love it baked with a fresh salad (with: tomato, cucumber and onion). It’s delicious and of course full with carbohydrates.
I love it! How about a recipe for your favorite Zucchini dish?

Gotta have the right carbs and not too many of them! Atkins works well, but only if it is done as a lifestyle change and not as another fad diet…which most tend to do and then complain that it does not work. There are a lot of tricks and tips that are needed, but my parents live on it and it helps keep them healthy and lean.
But for carbs in general, white aint right! Avoid the processed white products and especially SUGAR (in any form…white, brown, green, red…whatever;-)
